Tofu&Spinach&Tomatoes burgers

I am not a vegan at all but I am kind of fancy to prepare some quick vegan lunch/dinner/brunch menu occasionally.This kind of meals are super easy to prepare and using the airfryer ready in 20-30min in total.


Ingredients:

- 1/4 tofu block

- 1tsp of red paprika

- 1 garlic clove

- 1 handful of spinach

- 5 sun-dried tomatoes - chopped

- 2 TBsp of walnuts - grounded and used as a substitute for the flour

- 2 Tbsp of flaxseeds - grounded, soaked in 4TBsp of hot water for 5-10min as a substitute for the egg

- bit of Himalayan salt



Mix all together and shape 3 small burgers. Cooking in the airfryer for about 20min at 200 C

Served with the mashed avocado and cabbage in the whole-grain low GI roll with the sweet potatoes fries made in the air fryer too. Alternatively you can bake in the oven just using the baking paper and a bit of olive oil in the spray.
